Wagyu, pronounced “Wah-Gyew”, meaning ‘Japanese Cow’ originates from Japanese lineage which saw the first Australian Wagyu beef development program in the early 1900’s. Japanese Wagyu genetics were cross bred with other Australian cattle breeds, producing now the largest global supply of Wagyu beef outside of Japan.
Wagyu is characteristic of unique marbling properties, also known as intramuscular fat, more commonly referred as marble score and is graded in Australia by a grading system ranging from 0 (no marble) to 9.
